mmmmmmm. banana bread.

comfort food to the fisher family.

i made 4 loaves yesterday (two batches) per the request of my gang.

one big one (topped with green and blue m&m’s… which the kids ate quickly… before i got a photo). and three little ones (one given to my sick mom and one given to the owner of the baseball park where mason practices).

only one left for today.  this one will be gone as soon as i pick up my boy from his new sport (manager of the 13 and 14 girls basketball team at school… hmmm… is this a sport?).

BANANA BREAD

1/2 c. shortening

1 c. sugar

2 eggs

3 ripe bananas, smashed

3 Tblsp. buttermilk

2 c. flour

1 tsp. baking soda

a few blue and green m&m’s to sprinkle over the top if you are a SEAHAWK FAN.

mix shortening and sugar.  add eggs.  add bananas and buttermilk.  mix well, until fluffy.  add flour and baking soda.  mix.  pour into greased loaf pan (1 large or 3 small) and bake at 325 for 45 min (small) to 1 hr (large). 

feel free to add your own ingredients to this recipe.  i love walnuts and mini chocolate chips.  mason likes mini reeses pbutter cups mixed in.  brooke likes m&m’s on top only.  greg will eat anything i make.

the “app”etizer, that is!

here’s a great one for Christmas.

i make it every year.  it gets devoured real quick.  it’s that good.

i’m hoping to get my cookbooks attached to this site in the next two months.  it’s called APPETIZERS & DESSERTS… WHO NEEDS DINNER?  my kind of cooking.  this recipe is on page. 20 for those of you that have one.  until then, here’s the recipe.

KAHLUA, PECAIN, BROWN SUGAR BAKED BRIE

1 whole wheel of brie (Trader Joe’s or Costco has the creamiest, smoothest, delicious… and best priced)

1 c. Kahlua

1 c. brown sugar, packed

1 c. chopped pecans

preheat oven to 350.  slice top off brie and place in a super cute, oven safe dish..  bake for 10-15 minutes.  while baking, bring Kahlua and brown sugar to a boil in a pan.  reduce heat and simmer 10 minutes, stirring occasionally.  add the pecans.  remove from heat.  take brie out of oven and pour Kahlua mixture over top.  sprinkle additional pecans over top just for fun.  serve with crackers.  it’s great hot or at room temperature.  enjoy!
