oh my, how i love pie…

doesn’t everyone love pie?

if you were born anywhere before or in 1964, i guarantee you have “pie” stories.

my grandma loved pie. my mom makes the best pies ever. she has many recipes from her friends for pies from around the country. people have stories about their pies. cookbooks have entire sections devoted to pie.

pie is back!

as a matter of fact, my grandma betsy used to take me to knapps restaurant in tacoma, wa back in the day.  we would have a cup of soup, a half of sandwich and a piece of pie.  we would take one or two bites and ask for to-go boxes.  i swear we both ate our pie pieces in our cars on our way home…haha.

in the past it was all homemade.

now boxed crusts and funky new style crusts have taken over.  and pies are served with ice cream inside (not just on top).  and there are fried pies.  and the kind of pies you get at the supermarket in little bags that you will never, ever look at the calorie content on the back.  pie is pie.  it’s just good.  eat it.

so, when asked what one pie i would want at this moment…

coconut cream pie, of course.  well, at least my version of it.

COCONUT ICE CREAM PIE

35 ritz crackers (i use one sleeve of reduced fat version because that’s what’s in our pantry at all times)

5 Tblsp. butter, melted

3 c. vanilla ice cream, softened (i like plain old fashioned vanilla ice cream. no vanilla bean.  no ultra creamy, fancy type.  just the original.  even better if it comes in a box, not a round carton.  but that’s just me.  use whatever vanilla you like)

2/3 c. sweetened shredded coconut, not toasted

1 box (3.4 oz) coconut cream instant pudding mix

3/4 c. milk (i use 1% because that’s what we drink but i’ll bet it would be really yummy with 2%)

1 c. whipping cream

3 tsp. sugar

1 c. sweetened shredded coconut, toasted

crush ritz crackers in food processor.  mix with butter.  press into bottom and up sides of pie plate.  mix ice cream, non toasted coconut, pudding mix and mil together until creamy.  pour into pie crust.  place in freezer.  whip cream until peaks form.  add sugar half way through to sweeten.  while you are doing this, put 1 c. coconut on parchment paper on cookie sheet and broil.  watch closely.  it only takes a minute or two.  do not over toast.  cool.  after coconut is cooled, top pie with whipped cream and then toasted coconut.  return to freezer until ready to eat.

side note… you can make this pie and put in a regular pie crust or even an oreo pie crust.  but the ritz cracker (sweet/salt thing) is what i like.  the photo above is the one i made for my mom… she likes the regular crust.  that’s her generation.

layer 1: bake white cake according to box in 9×11 pan. cool.

layer 2: layer with boxed ice cream.  the kind that comes in a box is easy to cut into thick slabs and place over cake.  plus I love that old fashioned kind of ice cream.  we always had it as kids.  choose your own flavor.  we had chocolate chip.

layer 3: spray on whipped cream from a can.  i hope you find it necessary to keep a can on hand at all times like i do.  you never know who is going to stop by.  and if it’s someone’s kid, i swear you will look like the best mom in the world.  we keep it in our fridge all year long. feel free to spray in mouth too.  when nobody’s watching.

layer 4: strawberries.  or if you don’t have fresh fruit, feel free to top with sprinkles or malt balls or crushed girl scout cookies.  whatever floats your boat.

eat.

in bed.

with tv on.

today:

clean house.  call cleaning lady to really clean the house.  drink coffee.  lots of coffee.  put away holiday stuff (good thing i didn’t put much up).  go to grocery store to get food.  real food as my kids call it.  search for an apartment for brooke.  pray one comes easily.  an affordable one.  book tickets to CA to get her moved in.  find people to help me with mason.  drink more coffee.  don’t forget to drink water too.  buy new comforter for mason’s room so brooke’s boyfriend is comfortable when he visits (um, shouldn’t i have done that for mason in the first place).  get ingredients for a cake.  yep, kids requested a white cake with thick fudge frosting and topped with gummy bears.  ok.  pay bills.  write some thank you notes.  buy stamps.  convince family we are all going out to dinner tonight.  get some epsom salts for sore leg (i’m sure it will be really sore by the time i’m done with this day).  pour a hot bath.  sip a glass of wine.  settle in with some tv or a movie and write down a list of what i need to do tomorrow.

hello yummy in my tummy.

funny thing is i do not like candy canes.  if you ask if i’d like a candy cane, or nothing.. i’d choose nothing.  note to self.. fill candy and cookie jars with candy canes next year and i won’t eat any of the candy.  should have done that this year.  oh well.

but i do love candy cane ice cream.

i saw this on a fun site today.  and think i might want to make it.  but if you know me… you would know i would top it with fresh whipped cream as i served it.

i love yellow.  because brooke went through a “yellow” stage when she was little.  she had to wear these yellow jeans every day.  she sees them in photos now and asks why i would dress her like that.  um, hello.  yellow.  your choice.

and she used to sing…  you are my sunshine, my only sunshine, you make me happy, when skies are GREG (after her dad) to mason when he was a baby.

so, you ask why i like yellow?

did someone ask me to help plan a PINK party…

a party?  ok.  a PINK party?  heck ya!!

my aunt called me and asked if i’d help her plan a party for my cousin’s youngest daughter.  her name is Annika.  we call her anni.  she has a heart like no other.  she’s a lover of God.  she’s a friend to many.  she always puts family first.  she loves deeply.  she hugs large.  she would do anything for the ones she loves…. and probably for most strangers if asked.

anni lost her mom a few years ago.  over night.  shocked everyone.  and truthfully i believe it’s what made our empire of women in the family who we are today.  we all do for each other.  anni is the one who grieves openly.  she puts it out on social media.  she talks about her mom all of the time.  I love it.  she’s doing great.  she’s a senior in college.  she’s smart and beautiful (inside and out).  she has a smile and a laugh that draws you in.  so, it was so much fun to hear we are planning a party for her.  cousin Chrissy will be smiling down on us the whole time.  she is so proud of her kids. all 4 of them.  but Annika is the one that actually asked her grammie (my aunt) if we could gather the girls and celebrate her day.  and don’t worry, we will make everything happy and pink.  just the way anni will love it.

it was a no brainer that i said YES to help being a party planner.  i was just supposed to plan the pedicure appointments.  that seemed easy enough.  one phone call.  done.  but that’s not my style.

suddenly i find myself out today looking for pink things.  it was so much fun.  i had forgotten how much i like pink!  i think we all need to get our pedicures in various shades of pink.

i’m dreaming of a fisher Christmas…

‘dreaming’ is the key word here.

a fisher Christmas consists of whatever i happen to do to make it festive at the time.

each year it is different.

one year we had a hula hoop tree with lights hanging from the ceiling (thought it was a good idea at the time… should have just bought a tree).

most years we have fresh cut trees. we buy from our friends tree lot.  i like to support local families.  and to be honest with you, i feel sorry for the trees that are already cut down.  they need a home.  i don’t like to think of the ones that don’t get chosen by a family.  makes me sad.  every tree deserves a happy home.

last year someone gave us a fake tree they didn’t want anymore.  apparently they wanted a bigger one.  well, we live in a ranch style home.  not much room for a huge tree.  so we said yes, thank you.  yep, that’s the one we are using this year.

but i thought i’d do a little dreaming… just for fun… of what i’d like to see in my home one day.

just one Christmas morning i’d like to wake up with a decorated kitchen… instead of dishes in the sink from the casserole i insisted on making at midnight on Christmas eve after wrapping all of the presents.

i know this is random.  and i’m not really sure what i would do with it.  but i think this garland of pom pom’s are so much fun.  they remind me of when i was a kid.  we actually put tinsel on our tree.  along with strung popcorn.  that we did ourselves.  and pricked our fingers on the needles.  and actually popped our own popcorn.  the microwave was not invented yet.  i loved our family trees.  we all had our own ornaments as kids.  we loved opening that box every year.  well, at least i did.
