either way, i posted it on my pinterest board of “yummy treats” so i could remember the recipe.
it feels like it is 120 degrees out!!!
and we do not have air conditioning. i always ask why people who lived in WA would have AC, but then a few weeks out of the year i get it.
taco salad is cooling in fridge.
and root beer popsicles with vanilla in the middle are in freezer.
rum is in pantry.
i’m ready for my adult root beer float!
i think it’s time to make my “summer bucket list”.

i want a time out.
can’t use the car.
can’t come out of my room.
can’t answer the phone.

i love girl scout season.
those little girls are so sweet. so cute. i actually like them outside the stores. i appreciate when kids have to actually sell something face to face to reach their goal. nobody wants to do that anymore. yes, i’m old school. and proud of it.
in order to make them all happy, I buy a box of Thin Mints from each visit and store in my freezer so I can make these cookies all year long.
IT’S THAT TIME OF YEAR COOKIE
1 c. butter, softened
1 small pkg Instant Vanilla Pudding mix
3/4 c. brown sugar
1 tsp. vanilla
2 large eggs
2 1/4 (although i use close to 2 1/2) c. flour
1 tsp. baking soda
1/2 tsp. salt
1 sleeve Girl Scout Thin Mint cookies (about 16 cookies), lightly crushed
– mix butter and dry pudding mix. add vanilla and brown sugar. add eggs one at a time. mix until fluffy. mix in flour, baking soda and salt. Mix well. Lightly fold in Thin Mints. Roll into balls. Bake in preheated 375 oven for 9-10 minutes. EAT!
when my kids see the girl scouts… they yell, “mom, did you see? girl scout cookies! can you make your cookies?”

tonight i was just informed by my daughter, who has a social life, that she could not take her brother to baseball practice.
looks like i have plans for tonight now.
good thing I love baseball season.
today would have been my little sister’s 46th birthday.
i wanted to make a cake to celebrate her.
and who doesn’t love oreos.
after seeing this awesome cake on pinterest, I realized I was missing a few things.
i didn’t have a fancy silver cake stand (on my wish list now), cookies, sparklers or champagne.
i did, however, have a yellow cake mix and a tub of whipped cream cheese frosting.
and i had sprinkles. i always have sprinkles.
