this is what’s for dinner… and my kids are going to be so happy.
tonight is busy.
mason has baseball.
brooke is asking a boy to her dance.
and i’m sure her social life will keep the day going.
or maybe she’ll practice lacrosse with the girls.
and do some homework.
greg’s gone tonight.
so, this easy dinner is it!
here’s the recipe if you are looking for something new…
PASTA WITH CHICKEN, MOZZARELLA AND SUNDRIED TOMATOES
1 tsp. butter
1 tsp. oil (I use vegetable oil or EVOO)
a couple shakes garlic salt
4-5 thin chicken tenders (or one big breast)
1 small jar sundried tomatoes (reserve 1 tsp. oil from jar)
1/2 tsp. minced garlic
1 c. half and half
1 c. Kraft shredded mozzarella cheese
1 tsp. dried sweet basil
s&p to taste
1 box penne pasta
Cook pasta according to directions. While pasta is cooking, heat skillet and add butter, oil and garlic salt. Cut up chicken into small pieces and saute in pan. When no longer pink in center, add 1 tsp. oil from sundried tomato jar and garlic. Saute until chicken is lightly browned. Add half and half. Cook on medium for a minute or two. Add cheese and sweet basil. Cook another minute to set. If it’s too thick, add a little water from the pasta. Salt and pepper to taste if needed. Drain pasta and pour chicken mozzarella sauce into pasta pan. Stir well.
